There is no shortage of restaurants and fine dining in Florence, but if your stay in Italy includes exceptional experiences and fond memories, you must book a seat at “SPOON”, a monthly dinner event series dedicated to the art of convivial dining!

The Michelin star restaurant, Borgo San Jacopo, guided by Executive Chef Peter Brunel, hosts once again the now celebrative dinner appointments alongside his starred colleagues for the 4th edition of SPOON: an extraordinary gastronomical journey guided by the most famous names in contemporary cuisine, in an exceptional environment along the most beautiful bank of the river Arno. Michelin-starred chefs like Riccardo Agostini, Andrea Berton and Carlo Cracco launched this Fourth Edition collaborating with Chef Brunel, Pastry Chef Loretta Fanella and culinary expert Fausto Arrighi.

Trout, Camomile and Fennel

The guests first gather and socialize in the beautiful Picteau Lounge perched on the south banks of the Arno for an aperitivo with bubbly and customized cocktails. Chef Brunel introduces the Guest Chef and culinary team, while explaining each delicious bite of the starter course. Guests are then shown to their tables and visited by each of the staff. I was honored to join a table for 20 where we changed chairs every course, so time could also be enjoyed making new friends and having many different conversations.

As each course is presented, the Chefs appear and describe their dish and inspiration. Of course, the perfect wine must accompany each presentation, so the Sommelier, Salvatore Biscotti, showcases several outstanding wineries and explains their characteristics and attributes. The 1-Michelin starred Guest Chef Riccardo Agostini from Il Piastrino in Pennabilli was collaborating on the evening I attended. The menu included several fresh fish dishes: Trout with chamomile and fennel, Shrimp with velvet potato and pancetta and Black cod with honey, asparagus, truffle caviar and rice, along with an exceptional mallard dish with black cabbage pesto and burnt onion. Each dish bursting with flavor, complexity and innovation. Perfect mini dessert bites and liqueurs finished the meal.

I was delighted to be invited and participate in one of these educational, interactive and exceptional dining experiences. Book a table for two, bring a group or join others, just go! Countryside journey – The Fusion Bar & Restaurant
