Gianni always arrives at the right time, almost slipping on the floor and often the host – how he is called around these parts with affection – is disputed by the diners. The beauty of this place is just to open the door and know that there, in the hall, there isn’t just another guy who stands there and counts the places and the tips, but there is a guy who’s name is Gianni and that welcomes you as if you were in your own house. And in the Gianni manages to empathize with the client, because it is him who suggests what to eat and what not: all this while talking about Fiorentina, women, the city, of women, of literature, of women, of art, of women, of beaches to visit, of women, of Florentine secrets and in the end of women. È uno dei pochi posti dove ancora si respira Firenze, che è la città quella vera e che è alta e bassa assieme, colta e grezza alla stessa maniera. Gianni Manetti di questo locale è l’anima, Cent’ori è il suo campo di battaglia o di calcio o semplicemente di divertimento. In questo posto, che sta nel quartiere San Niccolò, i tavoli a pranzo sono riservati per gli amici e basta: vale a dire che chi entra siede e non sa con chi va a sedersi, capace che il dirimpettaio di desco è un avvocato, un fiaccheraio, un tassista, uno scrittore o un signore forzuto che lavora coi cani del canile comunale e che ti spiega tutti i trucchi per avere a che fare col peloso di turno.

Lo sa bene Ilaria, che è moglie di Gianni e che ha creato un menù capace di conciliare la tradizione con l’innovazione. Si mangia molto bene, qua: è un dato di fatto. Ma si mangia assai meglio con i quadri che sono alle pareti, con le pareti che sono “affrescate” dai pittori della città e con un’atmosfera che è molto complice: c’è un brusio piacevole che si diffonde attorno a ogni tavolo e accanto a ogni sedia, rigorosamente spaiata. Gianni arriva sempre nel momento giusto, quasi scivolando sul pavimento e spesso l’oste – come lo si chiama con affetto, da queste parti – viene conteso dai commensali. La bellezza di questo posto è appunto aprire la porta e sapere che di là, in sala, non c’è uno che se ne sta lì a contare il posto e il coperto, ma c’è appunto un tipo che si chiama Gianni e che ti fa stare come se tu sedessi a casa tua. E alla fine Gianni riesce ad entrare talmente in empatia col cliente che è lui a suggerire cosa mangiare e cosa no: tutto questo mentre si parla della Fiorentina, di donne, della città, di donne, di letteratura, di donne, di arte, di donne, di spiagge da visitare, di donne, di segreti tutti fiorentini e infine di donne. È un bel posto da andarci, questo.
