The restaurant led by Simone Cavaciocchi and Monica Cecconi offers authentic Florentine cuisine, local products, and careful attention to its wine cellar
To tell an idea of hospitality rooted in authentic Florentine tradition, in the quality of raw ingredients, and in a direct relationship with the local area: this is the mission of Demetra Hostaria, the restaurant in Via della Vigna Vecchia located on the ground floor of the historic Full Up club, one of the iconic landmarks of the city’s nightlife, set to reopen with a renewed formula. Led by Simone Cavaciocchi and Monica Cecconi, Demetra Hostaria approaches Florentine tradition with rigour, without folkloric shortcuts and without reducing local identity to a tourist formula. Its offering looks to historic recipes, everyday preparations, meat, fresh pasta, seasonality, and a selection of products from the surrounding area, with particular attention to Mugello and, where consistent with the gastronomic journey, Chianti. In such a central area as Santa Croce, the restaurant stands out for an offering that is rooted, recognisable, and far from generic, with the aim of restoring value to a Florentine cuisine taken seriously, capable of speaking both to a local public and to international guests. Raw ingredients are one of the project’s main pillars: the selection of suppliers follows criteria of quality, proximity, and sustainability among the companies involved, with the idea of building a cuisine that is, first and foremost, readable through its products, gestures, and preparations. The same attention runs through the wine and spirits offering, conceived as an integral part of conviviality. Demetra Hostaria also anticipates a new season for Full Up, which is preparing to return with themed evenings, special events, private functions, conventions, and artistic collaborations. Inside, there will also be “The Secret Cellar”, a more intimate and secluded space designed for tastings, private meetings, small events, and exclusive experiences.
