Spicy food from Calabria and South America at Osmo Cucina
The juxtaposition of spicy food from Calabria and from South America was at the centre of the lunch organised by the restaurant Osmo Cucina, featuring the dishes by Michelin-star chef Salvatore Morello (Inkiostro, Parma) and by resident chef Marco Anselmi: unforgettable were the fresh pasta by Morello, filled with different meats, accompanied by almonds and a red chili miso, paired with a novel Brazilian sparkling wine, or the lamb terrine by Anselmi glazed with gyoza made with offals, duck sauce, and a ginger and camomile kombucha gel.
