Andrea Candito

Dinner on the Arno.
A new chapter for Osteria Golden View.
Overlooking Ponte Vecchio, the restaurant offers a cuisine in which sea and land come together in a single narrative shaped by the experiences of chef Andrea Candito

Thanks to its large windows opening onto a view that takes in Ponte Vecchio, the Vasari Corridor, and the Torre di Arnolfo in a single glance, Osteria Golden View is, likely, the restaurant with the most breathtaking sights in the Tuscan capital. Yet the value and innovative character of the restaurant are not to be found only in the beauty of its setting in Florence’s Oltrarno: for the past three years, the kitchen has been led by Neapolitan chef Andrea Candito, whose inspiration brings together two souls, each rooted in a different tradition: Tuscany, where he has arrived, and Campania, where he was born. The chef sees the menu as a single narrative, made up of many experiences of different tones and flavours, without disdaining French accents while, at the same time, remaining firmly rooted in a cuisine of territory and substance. The menu at Osteria Golden View is now a celebration of the most intriguing kind of cuisine: while the starters range from scallops with potato foam and seasonal truffle, fried anchovies with chive mayonnaise, and burrata caprese with Cantabrian anchovies, entire sections of the menu, still within the field of entrées, are devoted in turn to shellfish, including prawns, langoustines, and king prawns, to oysters, and to seafood crudités, from seafood platters to amberjack carpaccio and tartare. The first courses, meanwhile, range from an evergreen such as saffron risotto with osso buco and marrow reduction, sea urchin spaghetti, or lobster linguine, to the chef’s signature dish: tagliolini with caviar, champagne, beurre acidulé, and finger lime. There are also land-based dishes such as tortellone with wild boar ragù and rigatoni carbonara with fresh truffle. Truffle itself, together with bistecca alla Fiorentina, sourced from a selection of different breeds, is an essential element of Osteria Golden View’s cuisine: it accompanies, from time to time, Fassona beef tartare with stracciatella, rigatoni carbonara, or another great classic, beef Wellington. The restaurant’s menu also features another dish of old-world charm: sole meunière, increasingly difficult to find in restaurant kitchens. A separate mention should be made of the wine cellar at the restaurant entrance, an authentic wunderkammer of auteur winemaking, where rare vintages from prestigious labels sit alongside oenological gems discovered around the world. Less than a year ago, Osteria Golden View began a new chapter in its history, with a significant restyling of the spaces that has enhanced the unique charm of the location.
